Ingredients

For the dough: - 2 1/4 teaspoons active dry yeast - 1/4 cup warm water - 1/2 cup milk - 1/4 cup sugar - 1/4 cup unsalted butter, melted - 1 egg - 1/2 teaspoon salt - 3 cups all-purpose flour For the poppy seed filling: - 1 cup poppy seeds - 1/2 cup milk - 1/4 cup sugar - 1/4 cup honey - 1 teaspoon vanilla extract - 1/4 cup raisins (optional) - 1/4 cup chopped nuts (optional)

Instructions

1. In a small bowl, dissolve the yeast in the warm water. Let it sit for about 5-10 minutes, or until it becomes frothy. 2. In a medium saucepan, heat the milk until it's warm but not hot. Remove from heat and combine with the sugar, melted butter, egg, and salt in a large mixing bowl. 3. Add the yeast mixture to the milk mixture. Gradually add the flour and mix until a dough forms. 4. Knead the dough on a floured surface for about 5-7 minutes, until it becomes smooth and elastic. Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1-2 hours, or until it doubles in size. 5. While the dough is rising, prepare the filling. In a medium saucepan, combine the poppy seeds and milk. Cook over medium heat, stirring constantly, until the mixture thickens. Remove from heat and stir in the sugar, honey, vanilla extract, raisins, and nuts. Let it cool to room temperature. 6. Preheat your oven to 350°F (175°C). Roll the dough out on a floured surface into a rectangle about 1/4 inch thick. 7. Spread the poppy seed filling evenly over the dough, leaving a small border around the edges. Roll the dough up tightly from one of the longer sides and pinch the edges to seal. 8. Place the roll on a baking sheet lined with parchment paper. Let it rest for about 20 minutes. 9. Bake in the preheated oven for 35-40 minutes, or until golden brown on top. Let it cool before slicing.
