Preparing the Quinoa

Begin by rinsing 1 cup of quinoa under cold water until the water runs clear. In a medium saucepan, combine the rinsed quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and let it simmer for about 15 minutes or until the water is absorbed. Remove from heat and let it stand covered for 5 minutes. Fluff with a fork and allow it to cool to room temperature.

Making the Salad
