Prepare the Avocado Salsa

1. Dice one ripe avocado, 1/4 cup of red onion, and 1 medium tomato. 2. Combine in a bowl and add the juice of one lime, a pinch of salt, and a tablespoon of chopped cilantro. 3. Mix gently and set aside.

Make the Spinach Omelette

1. Beat 2-3 eggs in a bowl, adding salt and pepper to taste. 2. Heat a non-stick skillet over medium heat and add a teaspoon of olive oil. 3. Add a handful of fresh spinach to the skillet and sauté until wilted. 4. Pour the beaten eggs over the spinach in the skillet. 5.
