Cook the White Rice
Begin by rinsing white rice under cold water until the water runs clear. In a pot, bring twice the amount of water to the rice to a boil, add the rice, cover, and simmer on low heat until the rice is fully cooked and fluffy, about 15-20 minutes.
Prepare the Grated Carrot
While the rice is cooking, wash and peel fresh carrots. Using a grater, grate the carrots into thin shreds. If desired, you can lightly steam the grated carrots to soften them, although they can also be left raw for added crunch.
Combine and Serve
