1. Gather all the ingredients: chicken breast (cut into bite-sized pieces), long-grain white rice, canned diced tomatoes, garlic (minced), onions (chopped), chicken broth, olive oil, salt, pepper, and any additional desired seasonings (e.g., paprika, oregano).
Cooking the Chicken
2. Heat olive oil in a large skillet over medium heat. Add the chicken pieces, season with salt and pepper, and cook until the chicken is browned and fully cooked through, about 6-8 minutes. Remove the chicken from the skillet and set it aside.
