Arepas Dough

1. In a large bowl, combine 100 grams of pre-cooked white cornmeal with a pinch of salt. Gradually add warm water, mixing continuously until the dough is firm but pliable. Let the dough rest for 5 minutes. 2. Divide the dough into equal portions, then form each portion into a ball. Flatten the balls between your hands to form discs about 1/2 inch thick. 3. Heat a small amount of oil in a skillet over medium heat. Place the arepas in the skillet and cook for about 5-7 minutes on each side, or until they are golden and develop a crust. Transfer to a paper towel-lined plate to remove any excess oil.
