  • flour (40g)
  • butter (15g)
  • chocolate (10g)
  • sugar (7.5g)
  • yeast (1.5g)
  • salt (0.5g)
  • milk or water (15g)
  • egg wash (0.5g)

Cooking Time: 20 minutesPreperation Time: 2 hours (including dough rising time)

Prepare the dough

Combine flour, sugar, a pinch of salt, and yeast in a large mixing bowl. Slowly add in water (or milk) and mix until a dough begins to form. Gently knead the dough on a floured surface until smooth, then cover and let it rise until doubled in size.

Incorporate butter

Once the dough has risen, roll it out on a floured surface into a large rectangle. Evenly distribute thin slices of cold butter over the surface, then fold the dough over the butter in thirds. Refrigerate for an hour.

Add chocolate and shape

Roll out the dough again into a rectangle, and place small chocolate bars or chunks along one edge. Carefully roll the dough over the chocolate, enclosing it completely. Cut the log into individual pieces, then arrange them on a baking sheet, leaving space for expansion.

Bake

Brush each croissant lightly with egg wash for a golden finish. Bake in a preheated oven at 220°C (425°F) for 15-20 minutes, or until the croissants are golden brown and puffed up.
