Prepare Cake Batter
1. Preheat your oven to 350Β°F (175Β°C). Grease and flour two 9-inch round cake pans. 2. In a medium bowl, whisk together 2 1/2 cups flour, 2 1/2 tsp baking powder, and 1/2 tsp salt. 3. In a large bowl, beat 1/2 cup unsalted butter and 1 1/2 cups sugar until creamy. Add 4 large eggs one at a time, beating well after each addition. 4. Blend in 1 tsp vanilla extract and 1/2 cup milk. Gradually add flour mixture and beat until combined. 5. Fold in 1 cup finely chopped fresh strawberries.
Bake the Cake
1. Divide the batter evenly between the prepared pans. Bake in preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. 2. Let the cakes cool in the pans for 10 minutes, then turn onto wire racks to cool completely.
Prepare Strawberry Frosting
1. In a large bowl, beat 1/2 cup unsalted butter until creamy. Gradually add 3-4 cups powdered sugar and 1/4 cup mashed strawberries, beating until smooth. Add 1-2 Tbsp milk if needed for desired consistency.
Assemble the Cake
1. Place one layer of cake on a serving plate and spread with a layer of strawberry frosting. 2. Place the second layer on top and frost the top and sides of the cake. 3. Decorate with additional fresh strawberries if desired.
