  • cream of tartar (1g)
  • vanilla extract (1g)
  • food coloring or flavoring (1g)

Zefir

1. Beat egg whites until stiff peaks form. Gradually add sugar, continuing to beat until the mixture is glossy and firm. 2. Gently fold in fruit puree of your choice (apple or berry purees are traditional) until just combined. 3. Add a pinch of Cream of Tartar and a few drops of vanilla extract for stability and flavor. If desired, add food coloring or strawberry flavoring for color and a fruity taste. 4. Pipe the mixture onto a baking sheet lined with parchment paper, using a piping bag or spoon. 5. Bake at a very low temperature to dry the zefir out without browning it, around 80°C (176°F) for 1 to 2 hours, depending on size. 6. Let the zefir cool completely before handling. Store in an airtight container to keep them soft and chewy.
