Dough Preparation
Combine 200 grams of wheat flour, a pinch of salt, one egg, and enough water to form a smooth, pliable dough. Knead well, then let it rest for about 30 minutes covered with a cloth.
Filling Preparation
Boil approximately 150 grams of potatoes until tender. Mash the potatoes and mix with finely chopped onions, grated cheese, salt, and pepper to taste, creating a rich and creamy filling.
Assembling the Pierogi
Roll out the dough on a floured surface to about 1/8 inch thickness. Cut out rounds using a cookie cutter or glass. Place a spoonful of the potato-cheese filling in the center of each round. Fold the dough over the filling to form a half-moon shape, pinching the edges to seal.
Cooking
Bring a large pot of salted water to a boil. Add pierogi in batches, cooking until they float to the surface, indicating they are done. For a crispy finish, pan-fry the boiled pierogi in a bit of butter until golden on each side. Serve hot with a dollop of sour cream on top.
