Basic Preparation

1. Rinse the rice under cold water until the water runs clear. 2. Soak the rice in water for 30 minutes, then drain. 3. In a medium saucepan, heat a tablespoon of oil or a knob of butter over medium heat. 4. Add finely chopped onion or garlic to the pan and sauté until transparent and fragrant. 5. Add the drained rice to the pan, stirring to coat the grains with the oil and to toast them slightly. 6. Pour in water (twice the amount of rice) and bring to a boil. 7.
