Preparing the Sesame Seeds

Begin by toasting the sesame seeds in a dry skillet over medium heat. Stir frequently until the seeds are golden brown and fragrant. This step enhances the sesame seeds' nutty flavor and makes the snap/bar more aromatic and enjoyable.

Making the Syrup

In a saucepan, mix sugar or honey with a little bit of water (if using sugar) and add the glucose syrup. Heat the mixture over medium heat, stirring constantly until the sugar dissolves completely and the mixture reaches a syrupy consistency. This syrup will act as the binding agent for the sesame seeds, giving the snap/bar its characteristic texture.

Combining the Ingredients

Pour the toasted sesame seeds into the syrup mixture, ensuring they're fully coated. Stir the mixture well to ensure every sesame seed is evenly coated in the syrup.

Shaping and Cooling

Spread the sesame seed and syrup mixture onto a parchment paper-lined tray. Flatten the mixture with a spatula or the back of a spoon to your desired thickness. Allow the snap/bar to cool and harden. Once cool, cut it into bars or snap it into pieces.
