🍳 How to cook (4 servings):
Ingredients
- 2 cups cooked jasmine rice (preferably day-old) - 200g chicken breasts, thinly sliced - 2 tbsp vegetable oil - 3 cloves garlic, minced - 1 medium onion, chopped - 1 red bell pepper, diced - 1 carrot, julienned - 2 eggs, beaten - 3 tbsp soy sauce - 2 tbsp fish sauce - 1 tbsp oyster sauce - 1 tsp sugar - 1/2 tsp white pepper - 3 green onions, sliced - Fresh cilantro for garnish - Lime wedges for serving
Instructions
1. Heat a large wok or frying pan over medium-high heat and add 1 tablespoon of vegetable oil. 2. Add the minced garlic and stir-fry until fragrant. 3. Add the sliced chicken and cook until it is no longer pink. 4. Push the chicken to one side of the pan and pour the beaten eggs into the empty space. Scramble the eggs until fully cooked. 5. Add the chopped onion, red bell pepper, and carrot to the pan. Stir-fry for 2-3 minutes. 6. Add the cooked jasmine rice to the pan and break up any clumps with a spatula. 7. Pour in the soy sauce, fish sauce, oyster sauce, sugar, and white pepper. Stir well to combine all the ingredients. 8. Continue to stir-fry for another 3-4 minutes, ensuring everything is evenly coated with the sauce. 9. Add the sliced green onions and toss to combine. 10. Remove from heat and garnish with fresh cilantro. Serve with lime wedges on the side.
