  • granulated sugar (125g)
  • milk or dark chocolate (75g)
  • dulce de leche (250g)
  • eggs (1.5g)
  • baking powder (7g)
  • salt (0.5g)

Prepare Dough

In a large mixing bowl, combine the all-purpose flour, a pinch of salt, and baking powder. Add softened butter or margarine and granulated sugar. Beat in 1-2 eggs to form a soft dough. Wrap this dough in plastic wrap and let it refrigerate for at least 1 hour.

Shape and Bake

Preheat your oven to 350°F (175°C). Roll out the dough to about 1/8-inch thickness on a floured surface. Use a round cutter to cut out cookies. Place them on a baking sheet lined with parchment paper. Bake for about 12-15 minutes or until they are lightly golden. Let them cool on a wire rack.

Assemble Alfajores

Once cooled, spread a generous amount of dulce de leche on the flat side of one cookie and then press another cookie on top, creating a sandwich. Optionally, dip half of the alfajor in melted chocolate for a decadent finish. Allow the chocolate to set before serving.
