Ingredients

- 1 cup powdered sugar - 3/4 cup almond flour - 2 large egg whites, room temperature - 1/4 cup granulated sugar - 1/2 teaspoon green tea powder (matcha) - Pinch of salt - Green food coloring (optional) For the filling: - 1/2 cup unsalted butter, room temperature - 1 cup powdered sugar - 1 tablespoon green tea powder (matcha) - 1-2 tablespoons milk (as needed)

Instructions

1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper. 2. Sift powdered sugar and almond flour together into a bowl. 3. In a separate bowl, beat egg whites until foamy. Gradually add granulated sugar and continue to beat until stiff peaks form. 4. Gently fold in the sifted dry ingredients, green tea powder, and a pinch of salt into the egg whites. Add a bit of green food coloring if desired. 5. Transfer the batter to a piping bag fitted with a round tip and pipe small circles onto the prepared baking sheet. 6. Tap the baking sheet on the counter to remove air bubbles. Let the macarons sit at room temperature for 30-40 minutes until a skin forms on the surface. 7. Bake for 15-18 minutes. Allow to cool completely before removing from the parchment paper. 8. For the filling, beat the butter until creamy. Gradually add powdered sugar and green tea powder. Add milk to reach the desired consistency. 9. Pair up similar-sized macaron shells and pipe the green tea filling onto one shell, then sandwich with the other. 10. Let the filled macarons sit in the refrigerator for at least 24 hours to develop the best flavor and texture before serving.
