Prepare the Crust

1. Preheat your oven to 325°F (160°C). 2. In a mixing bowl, combine 1 and 1/2 cups of graham cracker crumbs, 1/4 cup of melted butter, and 2 tablespoons of sugar. 3. Press the mixture into the bottom of a 9-inch springform pan. 4. Bake for 10 minutes, then allow it to cool.

Make the Cheesecake Filling

1. In a large bowl, beat 24 ounces of cream cheese until smooth. 2. Gradually add 1 cup of sugar, beating well. 3. Mix in 1 teaspoon of vanilla extract. 4. Add 3 eggs, one at a time, beating on low speed until just combined. 5. Pour the filling into the cooled crust.
