Ingredients

- 4 pounds of fresh mussels - 1 cup of white wine - 4 cloves garlic, minced - 1 shallot, finely chopped - 2 tablespoons olive oil - 1 cup of vegetable or fish broth - 1/2 cup of chopped parsley - Salt and pepper to taste - Lemon wedges for garnish (optional)

Preparation

1. Clean the mussels under cold running water. Discard any that remain open when tapped. 2. In a large pot, heat the olive oil over medium heat. 3. Add the garlic and shallot, sauté until fragrant (about 2 minutes). 4. Pour in the white wine and broth, bringing the mixture to a boil. 5. Add the mussels to the pot, cover, and cook for about 5-7 minutes, or until the mussels have opened. 6. Season with salt and pepper to taste. 7. Sprinkle with chopped parsley and serve with lemon wedges on the side if desired.
