Step 1: Prepare the Tart Crust

In a medium bowl, combine 1 1/4 cups of all-purpose flour, 1/4 cup of powdered sugar, and a pinch of salt. Add 1/2 cup of cold unsalted butter, cut into small pieces. Use a pastry cutter or your fingers to blend the butter into the flour mixture until it resembles coarse crumbs. Add 1 egg yolk and 2 tablespoons of cold water. Mix until the dough comes together. Press the dough into a tart pan, covering the bottom and sides evenly. Chill in the refrigerator for at least 30 minutes.

Step 2: Bake the Tart Crust

Preheat the oven to 350°F (175°C). Remove the tart crust from the refrigerator and prick the bottom with a fork. Line the crust with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes. Remove the weights and parchment paper and bake for an additional 10 minutes, or until the crust is golden brown. Allow to cool completely.

Step 3: Make the Chocolate Filling

In a small saucepan, heat 1 cup of heavy cream over medium heat until it just begins to simmer. Remove from heat and add 8 ounces of chopped dark chocolate. Let sit for 5 minutes, then whisk until smooth. Stir in 1 teaspoon of vanilla extract and a pinch of salt. Pour the chocolate filling into the cooled tart crust.

Step 4: Chill and Serve

Refrigerate the tart for at least 2 hours, or until the chocolate filling is set. Once set, remove from the refrigerator and let sit at room temperature for 10 minutes before serving. Optionally, you can garnish with fresh berries or a dusting of powdered sugar.
