  • cocoa powder (75g)
  • eggs (150g)
  • buttermilk (150g)
  • vegetable oil or butter (100g)
  • baking powder (2g)
  • vanilla extract (1g)
  • salt (0.5g)
  • fondant icing (300g)
  • food coloring (15g)
  • cream cheese or buttercream frosting (200g)

Prepare Cake Batter

Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the cake flour, sugar, cocoa powder (if making a chocolate cake), baking powder, and a pinch of salt. In another bowl, whisk together the eggs, buttermilk, vegetable oil (or melted butter), and vanilla extract. Gradually mix the wet ingredients into the dry ingredients until just combined, careful not to overmix.

Bake the Cake

Divide the batter evenly between two greased and floured cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
