Fried Chicken Leg with Buckwheat

🥗 Ingredients:

  • chicken leg (150g)
  • buckwheat (100g)
  • breading (breadcrumbs/flour) for chicken (10g)
  • cooking oil for frying (10g)
  • spices (salt, pepper, paprika, etc.) (2g)
  • egg wash (if used for breading) (20g)
  • herbs for garnish/flavor (parsley, thyme, etc.) (1g)

Preparing the Buckwheat

1. Rinse the buckwheat under cold water until the water runs clear. 2. In a saucepan, bring water to a boil and add the rinsed buckwheat. Season with a pinch of salt. 3. Reduce the heat to low, cover, and simmer the buckwheat until it's tender and has absorbed most of the water, about 15-20 minutes. Fluff it with a fork before serving.

Making Chicken Kiev

1. Preheat your oven to 200°C (392°F). 2. Prepare the chicken breasts by making an incision to create a pocket inside each breast. 3. Mix softened butter with minced garlic, herbs (parsley, dill, or chives), and seasonings. Fill the pockets of the chicken breasts with this mixture, then secure them closed with toothpicks. 4. Dip each breast first in flour, then in beaten egg, and finally coat them in breadcrumbs. 5. Heat a skillet with oil over medium-high heat. Once hot, sear the chicken breasts on both sides until golden brown. 6. Transfer the chicken to a baking tray and bake in the preheated oven until fully cooked, about 20-30 minutes, depending on the size of the breasts.

Serving

1. Plate a serving of the cooked buckwheat as a base. 2. Once the Chicken Kiev is cooked through, let it rest for a few minutes before slicing it. Place the Chicken Kiev over the buckwheat. 3. Garnish with fresh herbs and a wedge of lemon for an extra kick of flavor.
