- chicken patties (150g)
- buckwheat (100g)
- carrots (50g)
- mushrooms (50g)
- avocado (70g)
- greens (30g)
🍳 How to cook (4 servings):
Chicken Patties
1. In a large bowl, combine 500g of ground chicken, 1 finely chopped onion, 2 minced garlic cloves, 1 beaten egg, 2 tbsp breadcrumbs, 1 tsp salt, and 1/2 tsp black pepper. Mix well. 2. Form the mixture into small patties. 3. Heat 2 tbsp of oil in a pan over medium heat. Cook the patties for 5-6 minutes on each side, or until golden brown and cooked through. 4. Remove from the pan and keep warm.
Buckwheat with Vegetables
1. Rinse 1 cup of buckwheat under cold water. 2. In a medium pot, bring 2 cups of water to a boil. Add the buckwheat, reduce to a simmer, cover, and cook for about 15 minutes or until tender. 3. In a separate pan, heat 1 tbsp of oil over medium heat. Add 1 chopped bell pepper, 1 grated carrot, and 1 diced zucchini. Sauté until the vegetables are tender. 4. Combine the cooked buckwheat with the sautéed vegetables. Season with salt and pepper to taste.
Avocado Salad
1. In a salad bowl, combine 2 diced avocados, 1 diced tomato, 1/4 cup chopped red onion, and a handful of chopped cilantro. 2. Drizzle with the juice of 1 lime and 2 tbsp of olive oil. 3. Gently toss to combine and season with salt and pepper to taste.
