Making the Pancake Batter

In a large bowl, combine 2 cups of flour, 2 large eggs, 1/2 teaspoon of salt, and 1 tablespoon of vegetable oil. Gradually add 3 cups of milk, whisking continuously to avoid lumps. Let the batter rest for about 30 minutes.

Preparing the Meat Filling

Cook 1 pound of ground meat (beef, chicken, or pork) in a skillet over medium heat until browned. Add chopped onions, salt, and pepper to taste, and cook until the onions are soft. You can also incorporate other spices or herbs according to your preference.

Cooking the Pancakes

Heat a non-stick skillet over medium heat and lightly oil it. Pour in enough batter to cover the bottom of the skillet thinly. Cook until the edges start to dry out and the bottom is lightly golden, then flip and cook the other side. Continue until all the batter is used.

Assembling the Pancakes

Place a spoonful of the meat filling in the center of each pancake, fold the pancake in half, and then roll it up. Serve warm, with sour cream or your favorite sauce on the side if desired.
