Prepare Ingredients

Gather all necessary ingredients: 2 boneless, skinless chicken breasts, 2 cups of pasta (penne or spaghetti work well), 2 tablespoons of olive oil, 1 small onion (diced), 3 cloves of garlic (minced), 1 cup of heavy cream, 1 cup of chicken broth, 1/2 cup of grated Parmesan cheese, salt and pepper to taste, fresh parsley for garnish.

Cook the Pasta

In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

Cook the Chicken

While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper, and cook for about 6-7 minutes per side, or until golden brown and fully cooked through. Remove the chicken from the skillet and set aside.

Prepare the Sauce

In the same skillet, add the diced onion and sauté for about 3 minutes until translucent. Add the minced garlic and cook for another 1-2 minutes. Pour in the chicken broth and heavy cream, stirring well to combine. Bring to a simmer and let it cook for 5-7 minutes until the sauce begins to thicken.

Combine Pasta and Sauce

Slice the cooked chicken into strips and return to the skillet. Add the cooked pasta to the skillet, and toss everything together to ensure the pasta is well coated with the sauce.

Finish and Serve

Stir in the grated Parmesan cheese until melted and combined. Taste and adjust seasoning with salt and pepper, if needed. Garnish with fresh parsley, and serve hot.
