🥗 Ingredients:
- red bell peppers (100g)
- rice (50g)
- zucchini (100g)
- cheese (30g)
- olive oil (10g)
- seasonings (5g)
🍳 How to cook (4 servings):
Step 1
Preheat your oven to 375°F (190°C).
Step 2
Cut the tops off the bell peppers and remove the seeds. Set aside.
Step 3
In a pan, heat some olive oil over medium heat and sauté chopped onions and garlic until translucent.
Step 4
Add diced zucchini, tomatoes, and cooked quinoa to the pan. Season with salt, pepper, and Italian seasoning. Cook for about 5-7 minutes.
Step 5
Fill the bell peppers with the zucchini-quinoa mixture and place them in a baking dish.
Step 6
Cover the dish with foil and bake for 25-30 minutes. Remove the foil in the last 10 minutes to allow the tops to brown slightly.
Step 7
Remove from the oven and let it cool for a few minutes before serving.
