- buckwheat (100g)

🍳 How to cook (4 servings):
Ingredients
1 cup buckwheat groats, 2 cups water, 1 lb chicken breast, 1 tbsp olive oil, 1 onion (chopped), 2 cloves garlic (minced), 1 bell pepper (chopped), 1 cup cherry tomatoes (halved), 1 tsp paprika, Salt and pepper to taste, Fresh parsley for garnish
Instructions
1. Rinse the buckwheat groats under cold water. In a pot, bring 2 cups of water to a boil, add the buckwheat, reduce the heat to low, cover, and simmer for about 15 minutes or until the water is absorbed and the buckwheat is tender. Fluff with a fork and set aside. 2. While the buckwheat is cooking, heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant. 3. Cut the chicken breast into bite-sized pieces and add them to the skillet. Cook until the chicken is browned and cooked through, about 7-8 minutes. 4. Add the chopped bell pepper and cherry tomatoes to the skillet, cooking until the vegetables are tender, about 5 minutes. Season with paprika, salt, and pepper. 5. Stir in the cooked buckwheat, mixing well to combine all ingredients. Cook for an additional 2-3 minutes to heat everything through. 6.
