Ingredients
- 2 cups of basmati rice - 1 pound (approx. 450g) of chicken breast, cubed - 2 tablespoons of olive oil - 1 onion, chopped - 2 cloves of garlic, minced - 1 red bell pepper, sliced - 1 cup of broccoli florets - 1 carrot, sliced - 3 cups of chicken broth - 1 teaspoon of salt - 1/2 teaspoon of black pepper - 1 teaspoon of paprika - 1 teaspoon of soy sauce - Fresh parsley, chopped for garnish
Instructions
1. Begin by rinsing the rice under cold water until the water runs clear. Set aside. 2. In a large pot or deep skillet, heat olive oil over medium-high heat. Add the cubed chicken and season with salt, black pepper, and paprika. Cook until the chicken is browned and cooked through. Remove the chicken from the pot and set it aside. 3. In the same pot, add the chopped onion and minced garlic. Sauté until the onion becomes translucent. 4. Add the red bell pepper, broccoli, and carrot to the pot. Stir-fry the vegetables until they start to soften. 5. Return the chicken to the pot and stir everything well. 6. Add the rinsed rice and soy sauce, stirring to coat the rice in the oil and combine it with the other ingredients. 7. Pour in the chicken broth and bring to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 15-20 minutes or until the rice is cooked and the liquid is absorbed. 8. Once done, turn off the heat and let it rest for 5 minutes before fluffing the rice with a fork. 9. Garnish with freshly chopped parsley before serving.
