  • bell peppers (50g)
  • tomatoes (30g)
  • onions (20g)
  • pasta (100g)

Ingredients

- 2 boneless, skinless chicken breasts - 2 cups of whole wheat pasta - 1 cup of broccoli florets - 1 red bell pepper, sliced - 1 zucchini, sliced - 2 cloves of garlic, minced - 2 tablespoons of olive oil - 1/2 teaspoon of dried thyme - 1/2 teaspoon of dried basil - Salt and pepper to taste - 1/4 cup of grated Parmesan cheese (optional)

Instructions

1. Cook the whole wheat pasta according to package instructions. Drain and set aside. 2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook until browned and cooked through, about 5-7 minutes per side. Remove from skillet and slice into strips. 3. In the same skillet, add the remaining olive oil and minced garlic. Cook until fragrant, about 1 minute. 4. Add the broccoli, red bell pepper, and zucchini to the skillet. Sauté until the vegetables are tender, about 5-7 minutes. 5. Return the sliced chicken to the skillet and add the dried thyme, basil, salt, and pepper. Stir to combine and cook for an additional 2-3 minutes. 6. Add the cooked pasta to the skillet and toss to combine all ingredients. Cook for an additional 2 minutes to heat through. 7. Serve hot, topped with grated Parmesan cheese if desired.
