Ingredients

- 1 lb chicken breast or thighs, boneless and skinless - 6 cups chicken broth - 2 cups egg noodles - 1 cup carrots, sliced - 1 cup celery, sliced - 1 cup onion, chopped - 2 cloves garlic, minced - 1 tsp dried thyme - 1 tsp dried basil - Salt and pepper to taste - 2 tbsp olive oil - 2 tbsp fresh parsley, chopped (optional)

Instructions

1. Start by heating the olive oil in a large pot over medium heat. Add the chopped onion, garlic, carrots, and celery. Sauté for about 5 minutes until they are softened. 2. Add the chicken breast or thighs to the pot and pour in the chicken broth. Add the dried thyme, dried basil, salt, and pepper. Bring to a boil, then reduce the heat and let it simmer for about 20 minutes or until the chicken is fully cooked. 3. Remove the chicken from the pot and shred it into bite-sized pieces using two forks. 4. Add the egg noodles to the pot and let them cook according to the package instructions, usually around 7-8 minutes. 5. Return the shredded chicken to the pot and stir to combine. Let everything simmer together for an additional 5 minutes. 6. Taste and adjust the seasoning if necessary. If using, stir in the fresh parsley just before serving. 7.
