- 2 boneless, skinless chicken breasts, thinly sliced - 2 tablespoons soy sauce - 1 tablespoon olive oil - 1 garlic clove, minced - 1 bell pepper, sliced - 1 carrot, julienned - 1 cup broccoli florets - 1 cup snap peas - Salt and pepper to taste - Mixed salad greens - 1 cucumber, sliced - 1 tomato, sliced - 2 tablespoons balsamic vinaigrette

Instructions

1. In a bowl, marinate chicken slices with soy sauce for 10-15 minutes. 2. Heat olive oil in a large skillet over medium-high heat. Add minced garlic and stir-fry for about 30 seconds. 3.
