🍳 How to cook (4 servings):
Ingredients
- 4 large eggs - 4 cups mixed salad greens (e.g., spinach, arugula, and lettuce) - 1 cucumber, sliced - 1 avocado, diced - 1/2 red onion, thinly sliced - 1/4 cup feta cheese, crumbled (optional) - 2 tablespoons olive oil - 1 tablespoon lemon juice - Salt and pepper to taste
Instructions
1. Place the eggs in a saucepan and cover with cold water. Bring to a boil over medium-high heat. 2. Once boiling, reduce the heat to low and simmer for 10 minutes. 3. Remove the eggs from the boiling water and place them in a bowl of ice water to cool. 4. Once cooled, peel the eggs and slice them into quarters. 5.
