Prepare the Dough
In a large mixing bowl, combine 2 cups of all-purpose flour, 1/2 teaspoon of salt, and 1/2 cup of cold, cubed butter. Use your fingers to rub the butter into the flour until the mixture resembles breadcrumbs. Gradually add 1/4 cup of cold water and mix until the dough comes together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Prepare the Filling

Place a tablespoon of cheese filling in the center of each circle. Fold the dough over the filling to form a half-moon shape and press the edges to seal. Fry the Pies
Heat oil in a deep frying pan over medium heat. Once hot, carefully add the pies to the oil, a few at a time, and fry until golden brown, about 2-3 minutes on each side. Remove and drain on paper towels.
