Prepare the Lobster Filling

1. In a bowl, combine cooked lobster meat, ricotta cheese, chives, lemon zest, salt, and pepper. 2. Mix well until thoroughly combined, and set aside.

Make the Ravioli Dough

1. On a clean surface, create a mound with the flour and make a well in the center. 2. Crack the eggs into the well, add olive oil, and salt. 3. Gradually mix the flour into the eggs until a dough forms. 4. Knead the dough for about 10 minutes until smooth and elastic. 5. Wrap the dough in plastic wrap and let it rest for 30 minutes.

Assemble the Ravioli

1. Roll out the rested dough into thin sheets. 2. Place small mounds of lobster filling onto one sheet of dough, leaving space between each mound. 3. Lay another sheet of dough over the top and press down around each mound to seal. 4. Use a ravioli cutter or knife to cut out individual ravioli pieces.

Cook the Ravioli

1. Bring a large pot of salted water to a boil. 2. Add the ravioli and cook for 3-4 minutes, or until they float to the surface. 3. Remove with a slotted spoon and drain well.
