Preparing the Macaron Shells

1. Sift the almond flour and powdered sugar together into a large bowl. 2. In a separate bowl, beat the egg whites until foamy, then gradually add the granulated sugar, beating until stiff peaks form. 3. Gently fold the almond flour and powdered sugar mixture into the whipped egg whites, taking care not to deflate the mixture. 4. Add flavorings and colorings as desired, folding gently until just combined. 5. Pipe the mixture onto a baking sheet lined with parchment paper, forming small circles. 6. Allow the piped macarons to rest at room temperature for 30 minutes to an hour, until a skin forms on the surface. 7. Bake at a low temperature (150°C or 300°F) for about 15-20 minutes, or until the macarons have risen and set.

1. Prepare your preferred filling by whipping unsalted butter with powdered sugar until light and fluffy. 2. For flavored fillings, incorporate your choice of flavorings into the buttercream. 3. Once the macaron shells have cooled, pair them up and sandwich a dollop of filling between each pair.
