🍳 How to cook (4 servings):
Step 1: Prepare the Ingredients
Gather all the ingredients: 250 grams of paneer (cubed), 1/4 cup of mixed nuts (almonds, cashews, and walnuts), 1 tablespoon of ghee or oil, 1 teaspoon of cumin seeds, 1 onion (finely chopped), 2 tomatoes (pureed), 1 teaspoon of ginger-garlic paste, 1/2 teaspoon of turmeric powder, 1/2 teaspoon of chili powder, 1 teaspoon of garam masala, salt to taste, and fresh coriander leaves for garnish.
Step 2: Toast the Nuts
Heat a pan over medium heat and dry roast the mixed nuts until they are golden brown. Remove from the pan and set aside.
Step 3: Cook the Aromatics
In the same pan, add ghee or oil and heat it over medium flame. Add cumin seeds and let them splutter. Then, add the finely chopped onion and sauté until golden brown. Add ginger-garlic paste and cook for another minute.
Step 4: Add Tomatoes and Spices
Add the pureed tomatoes to the pan and cook until the oil starts to separate. Then, add turmeric powder, chili powder, garam masala, and salt. Cook for an additional 2-3 minutes.
Step 5: Cook the Paneer
Add the cubed paneer to the pan and gently mix to coat the paneer with the tomato and spice mixture. Cook for 5-7 minutes, allowing the paneer to absorb the flavors.
Step 6: Combine and Garnish
Add the toasted nuts to the pan and mix well. Cook for another 1-2 minutes. Garnish with fresh coriander leaves before serving.
