Prepare Ingredients

- 2 large eggs - 1 ripe avocado - 2 slices of bread (sourdough, whole grain, or your preference) - Salt and pepper to taste - Optional: lemon juice, chili flakes, or herbs for garnish

Poach the Eggs

1. Bring a pot of water to a simmer over medium heat. 2. Add a splash of vinegar to the water. 3. Crack each egg into a small bowl or cup. 4. Create a gentle whirlpool in the water with a spoon. 5.
