  • tomato (50g)
  • cucumber (50g)
  • lettuce (20g)
  • parsley (5g)
  • mayonnaise (15g)

Preparing the Sweet Potatoes

Preheat your oven to 200°C (or 400°F). While waiting, slice the sweet potatoes into round discs about half an inch thick. Toss them in a bowl with olive oil and a pinch of paprika until they’re evenly coated. Spread them out on a baking sheet and roast in the oven for 25-30 minutes, flipping halfway through, until they’re tender and slightly crispy on the edges.

Cooking the Boiled Egg

While the sweet potatoes are roasting, bring a pot of water to a boil. Carefully place the egg in the boiling water and let it cook for 9-10 minutes for a firm but slightly soft yolk. Once done, remove the egg from the pot, cool it under cold running water, and then peel it. Slice or chop the egg to your preferred size.

In a large bowl, combine the roasted sweet potato rounds, chopped boiled egg, drained and flaked tuna, sliced tomato, cucumber, and lettuce.
