Ingredients
1 large zucchini, grated 1 egg, lightly beaten 1/4 cup all-purpose flour 1/4 cup grated Parmesan cheese 1 clove garlic, minced Salt and pepper, to taste 2 tablespoons olive oil 1 ripe avocado, sliced 2 cups mixed greens 1 tablespoon lemon juice 1/2 tablespoon olive oil Salt and pepper, to taste
Instructions
1. After grating the zucchini, place it in a clean kitchen towel and squeeze out as much water as possible. 2. In a large bowl, combine the grated zucchini, beaten egg, flour, Parmesan cheese, minced garlic, salt, and pepper. Mix well until fully combined. 3. Heat the olive oil in a large skillet over medium heat. 4. Drop spoonfuls of the zucchini batter into the skillet, flattening them slightly with the back of a spoon to form fritters. Cook for 3-4 minutes on each side, until golden brown and crispy. 5. Remove the fritters from the skillet and place them on a paper towel-lined plate to drain any excess oil. 6. In a separate bowl, toss the mixed greens with lemon juice, olive oil, salt, and pepper. 7. Serve the zucchini fritters topped with sliced avocado and a side of dressed mixed greens.
