Preparing the Beef

Start by choosing a lean cut of beef, such as top round. Trim any excess fat from the beef as this can cause the jerky to spoil faster. Slice the beef against the grain into thin strips, approximately 1/4 inch thick for optimal drying and texture.

Making the Marinade

In a mixing bowl, combine the soy sauce, Worcestershire sauce, brown sugar, liquid smoke, garlic powder, onion powder, black pepper, and salt. Mix well until all the sugar is dissolved and the spices are evenly distributed.

Marinating the Beef

Place the beef strips into the marinade, ensuring each piece is fully coated. Cover and refrigerate for at least 4 hours, or overnight for a deeper flavor.

Drying the Beef
