- beef (200g)
- sweet potatoes (150g)
- peas (50g)
- tomato sauce (50g)
- parsley (10g)
π³ How to cook (4 servings):
Step 1
Heat 2 tablespoons of olive oil in a large pot over medium heat. Add 1 pound of cubed beef stew meat and cook until browned on all sides, about 5-7 minutes.
Step 2
Add 1 chopped onion and 2 minced garlic cloves to the pot and cook until softened, around 3-4 minutes.
Step 3
Stir in 2 large peeled and diced sweet potatoes and cook for another 5 minutes.
Step 4
Pour in 4 cups of beef broth, 1 cup of water, 1 teaspoon of dried thyme, 1 teaspoon of dried rosemary, and a bay leaf. Bring to a boil, then reduce heat and simmer for 45 minutes.
Step 5
Add 1 cup of fresh or frozen peas and continue to simmer for another 10 minutes. Season with salt and pepper to taste.
Step 6
Remove the bay leaf before serving. Enjoy the stew hot, garnished with fresh parsley if desired.
