  • carrots (30g)
  • potato (60g)
  • onion (37.5g)
  • garlic (1.5g)
  • vegetable oil (7.5g)
  • tomato paste or tomatoes (25g)
  • beef or pork broth or vegetable broth (400g)
  • sour cream (22.5g)
  • fresh dill (1g)
  • salt (-1g)
  • pepper (-1g)

Preparation

Begin by preparing the vegetables: peel and finely chop the beets, cabbage, carrots, potato, and onion. Mince the garlic. If using tomatoes, chop them finely; if using tomato paste, keep it ready to use.

Cooking

In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, cooking until they are soft but not browned. Add the beets, carrots, potatoes, tomatoes or tomato paste, stirring to combine. Pour in the broth (beef, pork, or vegetable, according to preference), and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer until the vegetables are tender, about 30-40 minutes. Season the soup with salt and pepper to taste.

Serving

Serve the borscht hot, garnished with fresh dill. Add a dollop of sour cream to each serving if desired.
