  • onion (20g)
  • cucumber (100g)

🍳 How to cook (4 servings):

Cooking Time: 30 minutesPreperation Time: 10 minutes

Step 1: Prepare Ingredients

Gather all the necessary ingredients: 1 cup of buckwheat, 2 boneless chicken breasts, 1 large cucumber, 1 onion, 2 cloves of garlic, 2 tablespoons olive oil, salt, pepper, and fresh herbs for garnish.

Step 2: Cook Buckwheat

Rinse the buckwheat under cold water. In a medium pot, bring 2 cups of water to a boil. Add a pinch of salt and the buckwheat. Reduce the heat, cover, and simmer for about 15-20 minutes until the buckwheat is tender and the water is absorbed. Remove from heat and set aside.

Step 3: Cook Chicken

While the buckwheat is cooking, season the chicken breasts with salt and pepper. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until fully cooked. Remove from skillet and let it rest before slicing it into strips.

Step 4: Sauté Vegetables

In the same skillet, add 1 tablespoon of olive oil and sauté the chopped onion and minced garlic until they are soft and fragrant. Add sliced cucumber and cook for another 2-3 minutes just until slightly tender but still crisp.

Step 5: Combine and Serve

In a large bowl, combine the cooked buckwheat, sautéed vegetables, and chicken strips. Toss gently to mix all ingredients well. Garnish with fresh herbs and serve warm.
