Step 1: Prepare the Batter

In a large mixing bowl, whisk together 1 cup of all-purpose flour, 2 large eggs, and 1/2 cup of milk. Slowly add another 1/2 cup of water, 1/4 teaspoon of salt, and 2 tablespoons of melted butter. Mix until smooth. Let the batter rest for at least 30 minutes.

Step 2: Cook the Crepes

Heat a non-stick skillet over medium heat and lightly grease it with butter. Pour a small amount of batter into the skillet and swirl it around to cover the bottom thinly. Cook for about 2 minutes or until the edges start to lift, then flip and cook the other side for another minute. Repeat with the remaining batter.

Step 3: Prepare the Cheese Filling

In a bowl, mix 1 cup of grated cheese (such as Gruyère, Swiss, or Cheddar), 1/4 cup of ricotta cheese, and a pinch of black pepper. Adjust salt to taste. You can also add finely chopped herbs like chives or parsley for extra flavor.

Step 4: Assemble the Crepes

Place a cooked crepe on a plate, spoon a generous amount of cheese filling onto one half, and fold the other half over the filling. You can also roll the crepe if you prefer.

Step 5: Serve
