Step 1: Prepare Ingredients

Gather all ingredients: 1 lb boneless, skinless chicken breast, 2 carrots (sliced), 2 celery stalks (chopped), 1 onion (chopped), 3 cloves garlic (minced), 8 cups chicken broth, 2 cups egg noodles, 1 tbsp olive oil, salt and pepper to taste, fresh parsley for garnish.

Step 2: Cook Chicken

In a large pot, heat olive oil over medium heat. Add the chicken breasts and cook until they are no longer pink in the center, about 7-8 minutes per side. Remove the chicken from the pot and set aside.

Step 3: Sauté Vegetables
