Ingredients
1. 2 tablespoons olive oil 2. 1 onion, finely chopped 3. 2 cloves garlic, minced 4. 2 large potatoes, peeled and diced 5. 2 carrots, sliced 6. 2 celery stalks, chopped 7. 1 pound boneless, skinless chicken breasts, cubed 8. 6 cups chicken broth 9. 1 teaspoon dried thyme 10. 1 teaspoon dried rosemary 11. Salt and pepper to taste 12. Cottage cheese for garnish
