- acid (lemon juice or vinegar) (15g)

🍳 How to cook (4 servings):
Preparing the Milk
Heat approximately 1 liter of milk in a large pot over medium heat until it's just about to boil. Keep an eye on the milk to prevent it from boiling over.
Adding the Acid
Once the milk is heated, add a few tablespoons up to 1/4 cup of lemon juice or vinegar slowly, stirring gently. You'll see the milk beginning to curdle as the acid reacts with it.
Curd Formation
Continue to cook the mixture on low heat for a couple of minutes until the curds fully separate from the whey. Make sure not to stir too vigorously to allow the curds to develop.
Draining the Curds
Line a colander with cheesecloth and pour the mixture through to separate the curds from the whey. Allow it to drain. You can save the whey for other recipes if desired.
Final Touch
Rinse the curds under cold water to remove any lingering acidity and drain again. Season with salt to taste, if desired. The cheese can be pressed into a firmer shape or crumbled depending on your preference.
