Prepare Dough
In a large mixing bowl, combine the warm milk (100-250 ml), sugar (50-100 grams), and active dry yeast (7-14 grams). Allow the mixture to sit until the yeast becomes frothy, about 5-10 minutes. Then, add in the flour (350-500 grams), melted butter (50-100 grams), eggs (1-2, beaten), and salt (5-10 grams). Mix until a soft dough forms. If the dough is too sticky, add a little more flour until it's manageable.
First Rise
Cover the dough with a damp cloth and let it rise in a warm place until it has doubled in size, usually about 1-2 hours.
Shape Rolls
Once the dough has risen, punch it down to release air bubbles. Divide the dough into equal pieces, shaping each piece into a round roll. Place the rolls on a baking sheet lined with parchment paper, leaving some space between each for them to expand.
Second Rise
Cover the rolls with a damp cloth again and let them rise for another 30-60 minutes, or until they have nearly doubled in size.
Bake
