Ingredients

- 4 crusty bread rolls - 4 large eggs - 1/4 cup fresh parsley, chopped - 1/4 cup fresh chives, chopped - 1/4 cup fresh dill, chopped - 2 tablespoons olive oil - Salt and pepper, to taste

Instructions

1. Preheat the oven to 350°F (175°C). 2. Cut the tops off the bread rolls and scoop out some of the bread from the inside to create a hollow center. 3. In a skillet, heat the olive oil over medium heat. 4. Crack an egg into the skillet and season with salt and pepper. Fry until the whites are set but the yolk is still runny, about 2-3 minutes. Repeat with the remaining eggs. 5. Mix the chopped parsley, chives, and dill together in a bowl. 6. Place a fried egg into each hollowed-out bread roll. 7. Sprinkle the fresh herb mixture over the eggs. 8. Place the filled bread rolls on a baking sheet and bake in the preheated oven for 5-7 minutes, until the bread is crispy and warmed through. 9.
