  • avocado (70g)

Ingredients

2 large eggs, 1 cup fresh spinach, 1/2 cup sliced mushrooms, 1/2 avocado, sliced, 1 tbsp olive oil, Salt and pepper to taste.

Step 1: Preparation

Wash and slice the mushrooms. Wash the spinach and let it drain. Slice the avocado.

Step 2: Cook the Vegetables

Heat olive oil in a non-stick skillet over medium heat. Add the mushrooms and sauté until they are tender, about 5 minutes. Add the spinach and cook until wilted, about 2 minutes. Season with salt and pepper to taste. Remove the vegetables from the skillet and set aside.

Step 3: Fry the Eggs

In the same skillet, add a little more olive oil if needed. Crack the eggs into the skillet and cook to your desired level of doneness—sunny side up, over easy, or over hard. Season with salt and pepper.

Step 4: Serve
