  • yeast (2g)
  • milk (40g)
  • butter or shortening (15g)
  • egg (30g)
  • salt (0.5g)
  • fruit filling (e.g., raspberry or cherry jam) (25g)

Dough Preparation

In a large mixing bowl, combine approximately 70-110 grams of all-purpose flour, 10-20 grams of sugar, and a pinch of salt. In another container, dissolve about 2 grams of yeast in 30-50 grams of warm milk, then add it to the flour mixture along with 10-20 grams of melted butter or shortening and 1/4 to 1/2 of a beaten egg. Knead the mixture into a soft dough. Let it rise until doubled.

Filling Preparation

Choose your preferred fruit jam, such as raspberry or cherry, to use as a filling for the kolaches. Ensure you have approximately 20-30 grams of jam per kolache.

Assembling and Baking

Once the dough has risen, punch it down and divide it into portions. Flatten each portion slightly, then place a dollop of fruit jam in the center. Pinch the dough around the filling to enclose it. Arrange the prepared pastries on a baking sheet, and let them rise again until puffy before baking in a preheated oven at 180°C (350°F) for 15-20 minutes, or until golden brown.
