🥗 Ingredients:
- yellow squash (80g)
- red bell pepper (40g)
- green bell pepper (40g)
- carrot (30g)
- feta cheese (20g)
- olive oil (10g)
- mixed salad greens (50g)
- dill (5g)
- garlic (3g)
🍳 How to cook (4 servings):
Step 1: Prepare the Vegetables
Wash and slice vegetables such as bell peppers, zucchini, eggplant, and cherry tomatoes. Make sure they are cut into grill-friendly sizes.
Step 2: Marinate
In a large bowl, toss the vegetables with olive oil, salt, pepper, and your favorite herbs (like thyme, rosemary, or basil). Let them marinate for about 15-20 minutes.
Step 3: Preheat the Grill
Preheat your grill to medium-high heat.
Step 4: Grill the Vegetables
Place the marinated vegetables on the grill. Cook until grill marks appear and vegetables are tender, turning occasionally. This should take about 5-7 minutes per side.
Step 5: Prepare the Dressing
While the vegetables are grilling, prepare the dressing. In a small bowl, whisk together olive oil, balsamic vinegar, minced garlic, salt, and pepper.
Step 6: Combine and Serve
Once the vegetables are grilled, remove them from the grill and place them in a serving bowl. Drizzle with the dressing and gently toss to combine. Garnish with fresh basil or parsley and serve warm or at room temperature.
